How to use it
- Enter sugar in the recipe, share of sugar replaced and cups of honey per cup of sugar.
- The result appears straight away and updates as you edit.
- Copy the result, or copy a link that keeps the same values to share it.
How it is calculated
Honey = sugar × share replaced × honey per cup of sugar. Per cup of honey: cut liquid by 1/4 cup (4 tbsp), add 1/2 tsp baking soda, lower the oven 25 °F (about 14 °C).
Example
Inputs: Sugar in the recipe = 2 cups, Share of sugar replaced = 50 %, Cups of honey per cup of sugar = 0.75. Result: Honey to use: 0.75 cups; Sugar still used: 1 cups; Honey in millilitres: 177.4 mL.
Limits and caveats
- The National Honey Board suggests starting with half the sugar; a full swap changes texture and colour.
- 3/4 cup of honey per cup of sugar is a common rule since honey is sweeter; you can change it.
- Honey browns faster, hence the lower oven; you may need to cover the cake near the end.
Questions about this tool
How much honey replaces a cup of sugar?
A common rule is 3/4 cup of honey with about 3 tablespoons less liquid, though starting with half the sugar is advised.
Why add baking soda?
Honey is slightly acidic; baking soda neutralises it and helps the rise.
Does honey work in every recipe?
It suits cakes, soft cookies and bread; meringues and crisp biscuits need dry sugar.
