How it is calculated
EU: XL 73 g and up, L 63 to under 73, M 53 to under 63, S under 53. USDA: minimum weight per dozen ÷ 12, e.g. Large = 24 oz ÷ 12 = 56.7 g.
Example
Inputs: Egg weight in shell = 66 g. Result: EU grade: L (large); USDA size class: Extra large.
Limits and caveats
- USDA classes are officially set by the dozen, not per egg, so the per egg result is an approximation.
- Weights are in the shell; a large egg out of the shell is about 50 g.
